Ingredients
8 oz uncured center-cut bacon
8 oz organic bulk sausage
4 oz bulk Mexican chorizo
8 large free-range eggs
1/2 cup organic heavy (whipping) cream
1/3 cup shredded organic Cheddar cheese
2 tsp chopped fresh sage leaves
1/2 tsp sea salt
1/4 tsp freshly ground black pepper
Directions
- Preheat the oven to 350°F.
- Heat a 10-inch ovenproof skillet over medium-high heat. Add the bacon and cook until crispy, 3 to 4 minutes per side. Remove the bacon and set aside to cool.
- Add the sausage and chorizo to the bacon fat left in the skillet and cook until browned, stirring to break up any clumps, about 5 minutes. Remove the meat with a slotted spoon and set aside to cool.
- In a medium bowl, gently beat the eggs. Crumble the bacon into the bowl, then add the sausage and chorizo, heavy cream, Cheddar cheese, sage, salt, and pepper. Pour the egg mixture into the skillet.
- Bake until the eggs are set and the top is golden brown, about 18 minutes. Let the frittata sit for a few minutes before slicing.
