Cheesy Chicken Parmesan Meatballs

kcalThe way to any Italian-American’s heart is through a plate of inauthentic but totally delicious chicken Parmesan. Bake a batch of these crowd-pleasers as hors d’oeuvres and win over all your guests. Or serve for dinner with Rhode Island Red Marinara Sauce and zucchini noodles.
Ingredients
1 pound free-range ground chicken
1 large free-range egg, lightly beaten
1 cup freshly grated organic Parmesan cheese
3/4 cup shredded organic mozzarella cheese
1/4 cup organic cream cheese, at room temperature
2 tbsp water
3 garlic cloves, minced
1 tsp onion powder
1/2 tsp Italian seasoning
1/2 tsp sea salt
1/2 tsp freshly ground black pepper
8 slices organic provolone cheese, cut into strips
Directions
- Preheat the oven to 450°F.
- Line a baking pan with parchment paper.
- In a large bowl, combine the chicken, egg, Parmesan and mozzarella cheeses, cream cheese, water, garlic, onion powder, Italian seasoning, salt, and pepper. Use your hands to mix the ingredients well.
- Form the mixture into about 20 meatballs, placing them in the baking pan as you do.
- Bake the meatballs until they reach an internal temperature of 165°F, about 18 minutes.
- Remove the pan from the oven and turn the oven to broil.
- Place the strips of provolone over the meatballs. Place them under the broiler until the cheese bubbles, 3 to 5 minutes. Serve hot.
